In 2017, Coffey joined the Southwest Plains Regional Service Center as an Education Consultant. Justin was able to share his passion for Project-Based Learning, Technology Integration, Rich Math and Science Tasks, and Education Reform with teachers throughout the state of Kansas.

Since 2019, Justin has served as Assistant Principal at Ulysses High School in Ulysses, Kansas. As Assistant Principal, Coffey specializes in bringing Career and Technical Education opportunities to students and plans to continue his mission to serve and inspire the teachers of Kansas so that they can be their best for the students of Kansas!

One of Coffey's favorite projects has been co-founding and directing an annual week-long Science, Technology, Engineering, and Mathematics camp called “Wild West STEM Camp.” The camp gives 4th, 5th, 6th, and 7th graders an opportunity to explore STEM careers and be inspired by Science, Technology, Engineering, and Math. "We work hard to ensure The Wild West STEM Camp can be offered for free to promising students in Dodge City. We want to show our young students that STEM fields are fun, give them permission to let their inner 'nerd' shine, and inspire them to work hard and pursue their dreams in a STEM field," Coffey explains.

Outside of the classroom, Coffey enjoys spending time camping, fishing, and running with his eleven-year-old son Blain, his three-year-old daughter Landry, and his wife of eighteen years, Amanda.
